Southern Inspired Black Eyed Pea Hummus <nobr>Print or Save This Recipe Here (.pdf)</nobr> Print E-mail

"Hum-us" a southern favorite!

1/3 lb smoked bacon
1/4 C lemon juice
1/4 C tahini paste
2 - 15.5 oz cans black eyed peas (drained and rinsed)
1 1/2 T Mr. Slambeaux Butt Shake
1/2 t salt
1 T reserved bacon fat
2 T olive oil

Cook bacon until crispy. Drain on paper towel and reserve bacon fat. Rough chop enough bacon to have 2 tablespoons for garnish. Place remainder of bacon in food processor and process unitl coarsely chopped. Add next seven items to food processor and process until smooth. Spread on plate drizzle with 2 tablespoons of bacon fat and top with rough chopped bacon. Serve with MSB Pita quarters below.

MSB Pita Quarters

12 - 6 inch pitas (quartered)
Mr. Slambeaux Butt Shake
cooking spray

Preheat oven to 350 degrees. Place quartered pitas on baking sheet, spray with cooking spray and sprinkle Butt Shake on top. Bake about 10-15 minutes until pitas crisp up.
